We love rhubarb here at Tara Distillery, and here's how we make our delicious Rhubarb Gimlet.
Recipe:
You will need:
60ml Tara Pot Still Gin
60ml Rhubarb Simple Syrup
30ml Fresh Squeezed Lime Juice
Lemon Garnish
Method:
In a cocktail shaker, add ice, Tara Pot Still Gin, rhubarb syrup, lime juice and shake for 15- 30 seconds. Strain into two cold coupe glasses and garnish with lime or lemon slices.
Rhubarb Syrup:
2 cups chopped rhubarb
3/4 cup caster super
1 cup water
Bring the rhubarb syrup to the boil then turn down the heat and simmer for 15-20 minutes. Skim any thing off the top. The rhubarb syrup can be kept in the fridge for up to one week.
